I am so thankful today for time to try out new things. I have found many recipes on Pinterest (my favorite!) but it seems like I rarely have time to try anything new. And with Wes and I trying to eat healthy, the task is even more daunting to find new recipes that are healthy. Tonight however I made a recipe for Weight Watchers Enchiladas, and let me tell you they were delicious!! And SO easy. Let me give you a quick run-through...
First you brown 1 lb. of extra lean ground turkey breast (make sure you check the fat content even if it is turkey!)
Then add 1 can (10 oz.) of enchilada sauce and 1 can (8 oz.) of tomato sauce. We use Hunts with garlic and basil cause it gives it such a good flavor! Mix that up.
Next, take 1 can of refrigerated biscuits reduced fat and cut into fourths.
Add the biscuit fourths to the meat mixture.
Then pour that into a greased 9 x 13 pan and bake at 350 degrees for 25 minutes.
Last, spread 1 cup of fat-free cheese (we used cheddar and a little bit of mozzerella) on the top then bake for 10 more minutes.
Last but not least take it out, let cool for about 5 minutes, then dig in!!
We really enjoyed this recipe! So delicious yet only 6 Weight Watchers points per serving! I am very thankful for being able to try fun things out like I did tonight. :)
